Ingredients

  • 1/2 cup cannabis infused butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup peanut butter see note above
  • 1 egg large
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, mix together the baking powder, baking soda, flour and salt; set aside.
  2. Beat the butter with an electric mixer until light and fluffy.
  3. Beat in the brown sugar and white sugar well.
  4. Lower mixer speed and beat in the peanut butter and the egg.
  5. Combine the dry ingredients at low speed just until mixed.
  6. Wrap the dough in plastic wrap. Chill it for at least three hours before using.
  7. Preheat oven to 375 degrees Fahrenheit.
  8. Divide the dough into 24 equal-sized balls. Roll each one in clean hands to form a ball, then set them about two inches apart on a parchment-lined baking sheet.
  9. Press a crisscross pattern across each cookie using the tines of a fork.
  10. Bake for 10 minutes until light brown
  11. Remove from oven and let cool for 1 minute before transferring to a wire rack.

CBD Infused Cookies

Chocolate Chip Cookies

Ingredients

  • 1 cup butter, softened
  • 2 mL (or 200mg) Medterra CBD oil 3000mg – can adjust dosage to your desire
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 ¼ cups GF all-purpose flour
  • 9 oz chocolate chips

Instructions

  1. If you cook at a temperature higher than 350 degrees, some of the CBD will likely evaporate.
  2. In a large bowl, combine the CBD oil to softened butter.
  3. Add granulated sugar and brown sugar to the bowl. Mix well. 
  4. Add eggs and vanilla extract to a bowl, and whisk together.
  5. Add baking soda and salt to the bowl, then mix well.
  6. Gradually add flour to the bowl and mix well.
  7. Fold in chocolate chips.
  8. Put the bowl of raw cookie dough in the refrigerator for an hour or so if possible. To avoid thinner cookies, it is best to chill the dough before baking.
  9. Roll the cookie dough into balls and place on a parchment-lined baking sheet with about 40 per side.
  10. Preheat oven to 350 degrees Fahrenheit. Bake for 10 minutes.

  2. Mix all of the dry ingredients in a bowl and add grated cheddar cheese.
  3. Make a well in the dry ingredients. Pour liquids into the opening on top of that.
  4. Mix the dry ingredients until there are no lumps.
  5. Flatten into rounds 1” thick; alternatively, form patties by hand using ⅓ cup of dough.
  6. Turn the baguette doughs out onto a parchment lined baking sheet. Optional: Brush the tops with egg wash for an additional sheen.
  7. Place biscuits on center rack of oven and cook for 15 minutes, or until slightly browned.
